Abstract

In 2014, NuVal, a shelf nutrition label provider in the United States, updated its nutrient profiling algorithm to better align with the latest US Dietary Guidelines and scientific literature. This revision caused large changes in the posted nutrition score for many products, even though their nutrient content was unchanged. We leverage this quasi-experiment to examine the role of shelf nutrition labels in retail pricing, household purchases, and nutrition disparity.
