Food Proteomics Platform

The food proteomics platform consists of three LC-MS systems, allowing for the separation, identification and quantification of different compounds, as well as elucidating the structure and chemical properties of molecules.

Description

The food proteomics platform enables:

  • Determination of protein composition of food matrix
  • High resolution identification of protein modification such as oxidation, glycation and phosphorylation
  • Characterization of protein degradation and cross-linking during food processing
  • Protein-protein interaction
  • High throughput quantification of amino acid modification
  • Peptide quantification

Options and requirements for use

The analysis of samples is made in collaboration with a superuser of the Food Proteomics Platform.

Interpretation and analysis of the results are not included in the fee.

At the start of a collaboration on research with the University of Copenhagen, a cooperation agreement must be drawn up. There are different types of agreements depending on the nature of the cooperation.
